My favourite recipes:-
Banana Flap Jacks (My son’s both love these especially when they are training)
Ingredients
- 250g porridge oats
- 70g unsalted butter
- 3 tbsp honey
- 50g soft dried dates pitted or raisins
- 200g bananas
- 1 tsp cinnamon or mixed spice
Instructions
- Preheat the oven to 160C/325F/Gas Mark 3. Line your baking tin with some baking paper overlapping on two sides for easy flapjacks removal later. I like to use the greaseproof foil, saves all the messing around.
- Put dates/raisins in a small bowl and cover them with few tablespoons of freshly boiled water. Let them soak and soften for 5 minutes or so.
- You can gently warm the honey in the microwave, timing will depend on your microwave. I suggest try with less time first.
- Add oats into honey and follow with dates/raisins and cinnamon (if using), stir well to combine.
- Put some of the mixture into prepared baking tin and smooth it over with the back of the spoon, then slice the banana and layer onto the oats and repeat. Up to you if you wish to have banana on top layer.
- Gently mark 16 portions with the back of the knife.
- Bake in preheated oven for approximately 25 – 30 minutes until golden brown.
I quite often add pumpkin or sesame seeds between the layers also. If you find the flap jacks are crumbly add more honey, everytime I make these they are slightly different. I suspect it has to do with how much fruit you use.
Vegetable Frittata
Ingredients
320g Leftover cooked vegetables (green beans, broccoli)
1 pepper (or 2 halves of either colours) deseeded and sliced
80g Mushrooms (quartered)
4 Eggs
Instructions
Preheat oven to 220C / Gas Mark 4
Line base 18cm non stick dish. Put all the veg into the dish.
In a mixing bowl, whisk together the egg, little milk if using, and seasoning.
Mix together the eggs with a pinch of salt and pepper, chives if you wish and cook in the oven until set and golden about 25 – 30 mins.
